You will notice that the lentils are cooked well and have a nice color. Mash the dal lightly using a potato masher or a spatula with a flat bottom to achieve the desired consistency.
Tempering the Dal
To add flavor to the dal, we will now prepare the tempering. In the same pressure pan, add 3 tbsp of sugar, 1 tsp of oil (to prevent the butter from burning), and 2 tbsp of ginger garlic paste. Sauté the ginger garlic paste for 1-2 minutes to remove its rawness. Lower the flame and add 2 tbsp of Kashmiri or Degi red chilli powder and 1/4th tsp of garam masala powder. Stir well and cook for 1 minute. Next, add tomato puree made from 5 whole tomatoes and cook until the butter and oil separate from the masala. Transfer the cooked dal to the pan and mix it with the masala. Adjust the consistency of the dal by adding water as per your preference.
Finishing Touches
Cook the dal on high flame until it comes to a boil, and then reduce the flame to low or medium-low. Continue cooking the dal for 20-25 minutes, stirring occasionally. This will help release the starch from the dal, resulting in a super creamy texture. After 25 minutes, the dal will have thickened and achieved the perfect consistency. Add 4-5 tbsp of fresh cream, a large tsp of roasted dried fenugreek powder, a large pinch of garam masala powder, and 2-3 tbsp of sugar. Mix well and taste the dal to adjust the salt.
