MEZCLAR FRUTAS EMPANADA
ABOUT? basically a Spanish or Latin American pastry turnover filled with a variety of savoury ingredients and baked or fried.its looks like a very famous indian sweet gujiya also but its different this recipe come from Mexico
INGREDIENTS
Plain flour 275g
Granulated sugar 25g
Scant 90g
Egg yolk 1 yolk (option between hung curd 1 spoon)
Ice water/ Milk 20 ml
Caster sugar to sprinkle
Almonds for garnish
Orange’s wedges for garnish
For the Filling:
Butter 1tspn
Ripe plantains 3 Nos
Cloves ½ tsp
Cinnamon 1 tsp
Raisins 150 gms
Rind & juice (orange) 2 pec.
Note: In recepi we used egh yog for dough
if you are vegetarian so you can replace it from the sweet hung curd.
METHOD OF PREPARATION
Combine the flour and sugar in a mixing bowl. Rub in the chilled cubes of butter
until the mixture resembles fin breadcrumbs.
Beat the egg yolk and add to the
flour mixture. Add iced water to make smooth dough. Shape it into a ball.
Melt the butter for the filling in a saucepan. Add the plantains, cloves and
cinnamon and cook over a moderate heat for 2-3 minutes.
Stir in the raisins, with orange rind and juice. Lower the heat so that the mixture
barely simmers. Cook for about15 minutes, until the raisins are plump and the
juice has evaporated. Set the mixture aside to cool.
Pre heat the oven to 200 C. Roll out the pastry on a lightly floured surface. Cut
into 10 cm rounds. Place the round on a baking sheet and spoon on a little of the
Filling. Dampen the rim of the pastry over the filling and crimp the edges to seal.
Brush the empanadas with milk. Bake, them in batches if necessary, for about 15
minutes or until they are golden. Allow to cool a little, sprinkle with caster sugar
and serve warm, with whole almonds and orange wedge.
